Summer has finally arrived and I have been craving all the salad recipes, especially the ones that can be made faster than in 10min and require simple ingredients that you are very likely to have at home. This dish is rich, creamy, and satisfying.

Did you know that avocados are classified as fruit? Avocados are nutrient rich and are a great source of vitamins such as C,K,E , potassium, folate and B6. Most of the calories in avocado come from “good” monosaturated fats, which is the type of fat that helps lower bad cholesterol.

Where to find the best avocados? From my experience you need to try few different shops, but I have discovered that the most delicious avocados are sold by M&S and are called “perfectly ripe avocados”. This is the only avocado that meet my expectations 95%of the times.

Here is how to make this delicious avocado boats:

Ingredients:

  • 2 large ripe avocados (or 3 smaller ones)

  • 1 can of tuna (drained weight 102g)

  • ¼ of red onion

  • About 10 cm long stalk of celery

  • 1 tbs of mayonnaise

  • 1 tbs of full fat Greek yoghurt

  • ½ tsp of Dijon mustard

  • Bunch or parsley

  • Salt & black pepper to a taste.

 

Preparation:

  • In a bowl stir together drained tuna, chopped onion, chopped celery, mayonnaise, Greek yoghurt, chopped parsley, salt& black pepper.

  • Cut avocados into halves, remove the stone and with a sharp knife cut into horizontal and vertical lines (this step is totally optional but it would be much easier to spoon the avocado out of the “boat”.

  • Top the avocado up with generous amount of tuna mixture.

  • Eat on its own or with a slice of grilled toast.
