Courgette and feta fritters



What is your favourite breakfast recipe? I used to like potato hash browns until I discovered this super delicious courgette feta “hash browns” or fritters. This low carb breakfast option is going to be your new favourite, trust me on that!


The fritters are ideal for breakfast, lunch or as a side dish to go with your main meal. You can have it on its own or top it up with your favourite toppings. The addition of feta makes this dish super flavoursome and extra delicious.


Here is how to make it:


Ingredients:

  • 2 medium size courgette

  • 1 medium egg

  • 50 g of feta cheese

  • 30 g of almond flour

  • ½ tbs of garlic

  • 2 scallions

  • 1 tsp of salt

  • 3 tbs of cold pressed peanut oil (or any other oil for frying)

  • Cheese cloth (to squeeze the water of the courgette)

  • Optional toppings (fried egg, halloumi cheese, Greek yoghurt or bacon)

Preparation:

Shred the courgettes on medium holes of a grater, Sprinkle with 1tsp of salt and set aside for about 15 min for the courgette to release the juice. Squeeze the grated courgette using the cheese cloth or in your hands to extract the excess liquid.


In a bowl, stir in grated courgette, bitten egg, crumbled feta, almond flour, garlic, chopped scallions and black pepper. Combine well and form patties (you can either make small size patties or a larger ones)


Heat 3 tbs of oil in non-sticky frying pan on a medium heat and fry the patties from each side until golden brown. Add more oil if needed. Be gentle and extra careful when flipping patties so they don’t break.


Top up with your favourite toppings and enjoy immediately while still warm.
